Today is my birthday (zomg 37! where does the time go?), so we celebrated Shrove Tuesday a day early, feasting on pancakes for supper last night.

These are Boy#2’s favorite pancakes — so much so that he named them after himself when he was 4, leading to strange breakfast requests that sounded as though he was speaking of himself in the third person. They are tall, not overly sweet, and have a nice nuttiness to the flavour.

I love homemade bread. I don’t love kneading it. This recipe produces light, airy rolls with a minimum of work, and the addition of whole wheat and millet flours provide a wonderful nuttiness to the flavor. You can easily change up the flavor by replacing the millet flour with another accent flour, such as buckwheat or rye. I buy my flour locally from Mountain Path, through my Buying Club.
